  • 2 Questions...

    Ok, so while I was making my bacon the other day, I thought of a couple things I wanted to ask you all. When adding more wood chips to smoker, do you usually dump old ones, or just throw handful on top? And can anyone give me detailed instructions/ parts list for the mod to make my GOSM go to lower temps?

    I do not have a GOSM so I can't help ya on the mod. As for the wood chips you just through the new ones on the old ones. they will eventually come out as ash. Any wood that you can still see is giving off it's smoke and flavor.

      Just add more chips to the existing chips. I prefer a mix of chips & chunks in my GOSM. Gets a longer burn time.

      As far as cold smoking, I've replaced the stock chip pan with a 9x9 cake pan. In cold smoking, I simply put 2-4 lit charcoal briquettes in the cake pan and lean a couple wood chunks against them. I keep the gas off & just use the charcoal. Temps will run consistently around 70-90* depending on external temps/sun.

      I can get mine to run 180* on the low setting, if that's the temps you're looking for.

        Thanks, mine was running about 200 on low, but it was hot, and in sun. Figured about the wood, but never know til you ask.

          I remember Icruzen posting pics of a needle valve mod for his propane GOSM a while back on SMF. I have seen people say the needle valve gives them control of temps down to 150 or lower.

              I have set mine on low....then turned the bottle down till I still see a flame. Been playing with mine still, just got it a couple month's ago.

                  BMJ - I don't know jack about a GOSM.. but I've F'ed around with a lot of propane burners. If you're too hot, you've got too much fuel. You could always pull the orface, solder it shut, and re-drill to a smaller size.

                  RE: smoking bacon, even 150* is too hot if you just want to smoke it. When I've made bacon, I cold smoked it which can be accomodated by a smoke generator. If you are going for just smoking, it seems to me that it will melt a lot of the fat out of it at those temps.. IMHO

                    Try looking here there are some picks of a needle valve mod that works GREAT. I've done this to both my GOSMs and it really helps to get the temps down, you can control the gas much better ....

                      That's funny, because I actually considered doing just that when I first looked into the needle valve mod. Mine like to run hot. Still need to do something with it. Being brass, I wasn't sure how well that would work. Or if it would get too hot. Bet dad would know, though.

                        Well a simpler idea is to just turn your knob to high and then begin to shut it off. Watch the flame and it will go down. Set it at low take a good look and then use that as a reference point. I can get my Big Block down to 90 degrees with no troubles but also make sure its outta the sun on a hot day to. Just setting there mine will show 100 degrees on a 90 degree day.
