  • Jerky Cabinet Production Run

    Doing the first production run in the jerky cabinet today.

    Got 10 pounds of top round sliced with the MH Jerky Mix with some MH Hot Whang added for good measure.



    Cabinet in place and warming up.



    Got just shy of 10 pounds on . Oh well.



    Loaded up and ready to go.



    I'll give it a few hours of smoke then put the fan on for some accellerated dehydration action.

    Back later.

    Yeah Bud! This is what I've been waiting to see

    If you had put the rest of the meat on you would have risked blocking air flow...Good choice...

                Putting some smoke on it.



                Did some shuffling around of pieces as they started to shrink and got the rest of the jerky in.

                The ones on the firebox side are drying faster. Makes sense given that heat wants to rise. Rotated the racks end to end and it should be fine. It's all about learning your cooker. Whatever that cooker may be.

                I probably could have balanced it out by moving the tuning plates in the SnP. Oh well maybe next time.

                Got the infrared thermo out and took temps at various places along the path.











                Cabinet should be fine.

                I'll let it smoke a bit more then put the fan on.

                  So you are losing 100 degrees between the burner and the box?

                  I am curious on the burner, I have looked at those before and may work for my setup.

                  Looks like that will work out well for you.

                      Probably more since the first temp was the firebox lid. But that's okay because that burner can get the SnP up to 375° easily. And I have had trouble keeping it lit doing jerky in the past because I have had to turn it down so low to keep the temp below 160°.

                      This arrangement lets me keep the burner up high enough for it to stay happy and lit but not so high that I'm going to set the plywood on fire.

                          Smoking is done. Running in "dehydrator mode" now.



                          It ain't particularly pretty but it's functional.

                            A needle valve may help...assuming the burner is protected from the wind.
