    Mrs Bear’s Blueberry Zucchini Bread

    I put this in "Desserts", because I think it's more like Cake than Bread.

    Mrs Bear gave me permission to post this recipe for all you Great Guys & Gals!!

    Ingredients:
    4 Eggs
    2 Cups Sugar
    1 Cup Veg Oil
    3 1/2 Cups flour
    2 Cups Grated Zuke
    2 Cups Blueberries
    1/2 tsp Baking Soda
    3/4 tsp Baking Powder
    1/2 tsp Salt
    1 tsp Cinnamon
    1tsp Vanilla


    Beat Eggs, gradually adding Sugar, then oil.
    Combine Dry Ingredients, add to first mixture, along with Grated Zuke.
    Stir in Blueberries.

    Pour into 2 Greased & floured Loaf Pans, or 6 Mini-Loaf Pans (Mrs Bear's way).

    Bake at 350° for 55 Minutes.

        Showed to the Mrs. today and it just so happens blueberries are on sale this week. She's making it this weekend!

          Those look great!

          We make pretty much make the same ones but omit the cinnamon. Zukes are in season here and blueberries have all popped. $1.00 a pound and I'm surrounded by them.

                        Man, I never thought about putting blueberries in zuc' bread! I love blueberries. This is definitely on the to do list. Thanks for sharing!

                          That will work---I used "Wineberries" a couple times & it was Great !!
                          Wineberries are a little Tart, but they're my favorite Berries.
