So I have a few brisket pics

  • So I have a few brisket pics

    And it seems we need to repopulate this place with pics of the basics of BBQ...
    14# packer trimmed and dressed with MH JAB and A's beef rub...
    The shallow slices on the left side guide me when it's time to cut against the grain...
    The pans on the right have the fat trimmings...Rendering the fat as recommended by...Someone ...
    Smoking with Hickory and a bit of skeet...


    A few hours later, after the rub was set, I basted it with the rendered fat...Did that several more times throughout the night...


    Meanwhile over at the Weber...
    Grilled up some breaded pork chops for supper...


    While the pork rested I grilled some okra and heated some rolls...
    This was served with some fresh garden tomatoes...No pics...


    Around the 11 hour point...
    Heavy rain for at least the last three hours...
    Decided enough was enough...I.T. was 170 or so...
    Put it in a pan...Added a cup of beef broth and foiled it...
    You guessed it...Into the oven goes the brisket and into bed goes me...


    Fast forward to today...
    Brisket got rested in the cooler and then put in the fridge...
    When sliced it looks like this...


    Point got removed and saved for another day
    Flat gets cut up and I'm ready to eat


    May add more pics later...I dunno...

    Pics like that are why we stick around here... That would be for the brisket, not the gut shot...
