We like sweet onions on the grill, so this is a way I came up with to make a great appetizer out of them. Sorta like an onion ABT.
onion peeled, sliced, and ready to boil
layers separated
stuffed with sausage
rolled up
wrapped with bacon and rolled in rub
Since this original post I wrap the bacon in a criss-cross pattern for more bacon coverage
off the grill and ready to eat.
Grilled-Stuffed Onion Packets
1 large sweet onion, peeled
pork sausage or any type of sausage or meat
thick sliced bacon
BBQ rub or steak seasoning
1. Begin with a peeled large size onion that you slice half way to the
center from top to bottom. Drop it into boiling water and cook for 9-10
minutes. Remove the onion from the water and when it cools, remove each
layer of the onion. Use the small center, chopped fine for adding to the
stuffing.
2. Now you stuff the onionskins with pork sausage, or any type of sausage or
meat you like, and roll it up. Wrap with a bacon strip. Season with
BBQ rub or Steak seasoning.
Cooking Tip: You can grill them, broil them. or smoke them then crisp them
on the grill. As you do, baste them on both sides with Garlic butter, BBQ
sauce, or a glaze. They take about 8 minutes per side when done on the grill, depending on how fat
you stuff them and your heat source.
Cooking Tip: These go great with ABT's or Armadillo eggs as snacks.
