    Your just pre warming the cooler. So right now pour boiling water in it. Then when your brisket is done dump the water, put the brisket in, pack it with towels

      Ohh the water is just to warm the insides and internally. Then drain it when I put the brisket in?

              Worst case, can I use the oven and keep it at it slowest setting(170) and keep the meat double wrapped in there? Or is the wrapped and insulated cooler better?

                I would leave it in the cooler as long as I can, 170 is fairly hot for holding, my food dehydrator runs about 170 if ya see what I'm saying...

                      I have it in the cooler heated. Brisket is foiled and wrapped in towels. Ambient cooler IT is 140-50ish

                                170° is fine to hold if it's wrapped. The IT should have been in the 200° range to finish so 170° is not going to cook it more. If you can keep some of the juices in the foil so much the better.
