              Interesting to see them displayed like that. The only large scale ones (similar) I've see were salt block lined walk in coolers with humidity control and no windows.
              Bettin they would be real tasty and real pricey!

                I wonder how close the keep to the 21 day wet and 15 day dry aging? That's right close to the 40 day max (that I've read of)?
