    My wife comes home with a brisket.So it looks like monday will be Brisket Day instead of Labor Day. 10 pounder she picked up from Wal Mart this morning.

            Usually- don’t bother with the standard “beef ribs”. They are scavenged for most all the decent meat for burger, etc. Look for a “beef plate”.

              Yup, beef "ribs" around here are crap at best. Beef plate/short ribs are the best.

                I'm only doing the point today.She said I could turn the flat into pastrami if I wanted too.
                I'm going check for the beef plate at a local farm we have here.They have a store front.I know they were never competitive with their prices though.

                    About 4 hours in.The wind here is playing havoc with my temps.Although it's been holding up and down between 250 and 275.
