  • Whitetail snack sticks,,45lbs of goodness

    My buddy killed a nice whitetail this year and wanted some snack sticks,, well I said come on over,, we mixed pork butt with it on a ratio of 45/55 whitetail to pork butt,,, turned out great,,

    Had 4 full racks in the smoker We did two of the Jap sticks bags

    Had a couple blowouts but not bad,,, Started in smoker at 130 for 2hrs then bumped temp up 10* each hour till smoker reached 170 and IT went to 152,,, had a hell of a stall on this batch at 135,,, so got late and I turned the smoker down to 125 with all vents open and let ride overnight,, next morning back up to 170 and 2hrs later they hit 152 on the dot,,, came out just right,,,, any longer and they would have been too dry,,, great snap on the casings.

      They turned out great,,,, flavor was spot on,,, highly rec. if you like a sweet type stick.

        Lava jack cheese? never heard of it. I assume it's got some heat?

        Nice sticks, makes me want to get a stuffer. Got 3 quarters in the freezer that I still need to process.

            ya it's half jap/hab cheese,,,, ya has some heat.

                      Always nice to have helpers...

                      Little horse trading is good...
                      The last sticks I did for a guy, he’s the manager at a propane company. So I charged half price, plus a couple fill ups of propane for my 5th wheel camper this camping season.
