    hello, I came across this site while looking for new sausage recipes and WOW what a website... good job!!!!!!!!
    I have been tinkering for a couple years with sausages and smoking.
    I have 2 brinkman vertical charcoal, and a MES smoker.
    I just got done making a 10# batch of garlic and horseradish venison summer sausage that was posted on here. it is in the fridge and I will smoke it tomorrow. and while I am waiting on the smoker I will be making a 10# batch of hot Italian w/chipotle cheese venison brats.... once again fine job on the site!!!!!!!!!

      Glad you decided to come out of the shadows.. Not like making you own sausage.. What a great pass time and sooooo much better than store bought....

                            thanx for all of the welcomes!!! I ended up having to run new wiring and move in furniture today... so I just made loaves for the summer sausage and loaded up the amazing products pellet smoker in the MES and let it go.. (a simple but amazing product) I did manage to make 5# of sweet Italian and 5# of hot Italian sausage which I am gonna let it rest in the fridge and just make it into bulk and patties tomorrow after work. put it in at 10am and after 6 1/2 hours up to 138 deg. guessing it should be done around 8pm. I will try and get some pics....
