  • Beef Eye of Round Roast

    Not a whole lot of pics, butt a whole lot of flavor. This was an 8 lb roast that I cut in half (got 2 suppers oot of this), seasoned with JAB, Tatonka Dust, Fresh ground Salt and Pepper. Let it sit overnight in the fridge, then rehit it with the JAB. Cooked at 134 for 20 hours in the SV, ice bathed. Reheated at 134 and seared over RO lump. Let it rest. Sliced and into sammies, along with shrooms, some baked Brussel sprouts, and wonderPhil beef aujus. Freakin' YUMMO!

      Thanks brutha... The sammie pic looked a bit weak on the meat load... Shit, oh well... That was my grandson's plate... he is a light eater... got busy and din't pay attention to the photo gig.

          You used about the same as I did---My best Eye Round was 132° for 21 hours.

          Sure am glad you guys talked me into getting an SV !!!!

                  Great looking Sammie, I just did my first SV eye of round for Christmas Eve per Bearcarvers steps. It was some good eatin' as I'm sure yours was.

                    Thanks folks... It was a hit for sure!

                    Emily: "Pop-Pop, what's that stick thing do?"

                    Me: "That is what's called sous vide. It get's water to a set temperature and cooks the meat perfectly from tip to tip."

                    Emily: "So you boil the meat?"

                    Me: "No honey, the meat is sealed in a bag and is placed in the water to cook for a while, then seared on the grill."

                    Emily: "Oh. Do I need one of these?"

                    Me: "Someday soon, you will."
