My local weekly grocery add from Albertson's has USDA choice packer brisket for $1.77/lb with a limit of 2 per person.
I stopped on the way home from work and picked up a couple. Going to try a long SV cook. I am going to smoke one for 3 or 4 hours, cut it into quarters, vac bag it, then SV for 24/36/48/72 hours and see how it turns out at each phase. I don't mind experimenting with a $25 brisket.
