I decided that I would fix a Prime Rib Roast for dinner tomorrow. I plan on sitting outside tomorrow smelling the sweet smell of pecan smoke while the prime rib takes a long low & slow nap in that sweet pecan smoke.
Then I'll let it rest while I fire up the Keg to about 550° for a quick sear before it's final rest before slicing for dinner.
All in all, I'm looking forward to a relaxing day tending the cookers.

A heavy dusting of a mix of Sea salt, CBP, minced garlic, and minced onion. It'll get another dusting when it comes out of the fridge tomorrow.

For now it'll rest uncovered in the fridge til morning.
