              Just got my Smitty's 2017

              Comparing it to 2015 and 2016, seems to be a finer grind and a slightly darker color. Just an observation is all and not a problem.

              As far as taste, Excellent as usual.

                  How would one compare 2016 smittys to straight cayenne pepper. Going to make some candied pecans and was thinking of subbing smittys for the cayenne that the recipe calls for.
                  Good idea? Horrible idea?

                    Probably..given a year aging... maybe use 20% less or so of the Smitty’s. ’16 was not really hot, but hotter than cayenne as I recall

                      Thinking I will use the Smittys at the original amount. If it ends up hotter, that may be a good thing otherwise the pecans disappear fast
