I had a nice halibut filet a coworker gave me a couple of weeks ago. He had caught it in Alaska last fall. I have never had halibut before and a few here gave me some suggestions. I had almost decided to bread it and fry but saw this recipe right before I was leaving to do my shopping so I went with this.
I cooked a leak, a big shallot and some garlic in butter in a CI skillet on the Weber until soft then put them in my 10" Dutch oven. Got some sliced porta bella mushrooms going in the same skillet. I seasoned the halibut with S&P and put on top of the leak, shallot and garlic mixture. Topped that with the mushrooms. Baked for about 15 minutes with 14 coals on top and 7 on the bottom. Squeezed a little lemon juice on top and had that with fried potatoes.
It was delicious, simple and fun to do on a beautiful 70 degree Sunday! Thanks for looking!
