First I sous Vide the chop for 45 minutes.
I run the "Q" wide open and let it warm up for 8 - 10 minutes. I have to use a griddle, Weber makes one for the "Q". Here' is one at Home Depot, it's the one I use but I think I got mine from Amazone?

It has two sides, one flat and one ribbed. I'm useing the ribbed side, but the flat side works better. Why...
Put the chop on the griddle,
Wait couple minutes, flip,
Another minute or two, pull and rest - then serve.
It ain't perfect, but it works.
It will Not sear like this on the grate without overcooking.
On edit, I fergot. I put the griddle in the Q while it is warming up.
