  • Bacon Wrapped Smoked Scallops

    The neighbor and I won a 5lb. bag of scallops at the club last week. He said can you smoke scallops. I said lets find out. I only did 1/2 of the bag just in case.

    Wrapped them in bacon, sprinkled with Herbes de Provence and a little Old Bay Seasoning.

    Smoked with alder wood at 225 degrees for about 1 hour until IT of 145 degrees.

    Also did some chunks of filet mignon rubbed with coffee rub and JAB. What a great combination for a chunk of beef.

    There were no left overs to be found. Lets just say this will happen again real soon. And the Packers beat the Cowboys to boot. What a great day.

                      man that looks good. I tried smoking some scallops once and they sucked...Yours look great and I'd love to try those. I may have to give it another shot.

                            I've never cooked a scallop in my life, they intimidate me for some reason. But I might just have to try this, looks great.

                              Do it. Sweet, tender meat. My love is bacon wrapped, seared in bacon grease with GP at the end of the sear. But again... I must forsake my love. Sigh.
