Decided to make up some lobster tacos last night. Fact of the matter, I'm really the only one that likes lobster and shell fish. But, we were doing it anyway. I thought they were really good, the wife liked them and I got the "they're OK" from the kids. However, they're weren't any leftovers.
So, I started with some fresh, raw corn tortillas and cooked them up. Next, I made the salsa. I couldn't find and yellow tomatoes so I used red.
Chipotle Salsa:
• 2 limes, zested and juiced
• 1 tablespoon chopped chipotle in adobo puree
• 2 teaspoons honey
• 1/4 cup extra-virgin olive oil
• 3 yellow tomatoes, halved, seeded and diced
• 1/2 small red onion, thinly sliced
• 1/4 cup chopped fresh cilantro leaves, plus more for garnish
• Salt and freshly ground black pepper
This is very good on it's own.
Then, it was on to grilling the lobster tails.
Last thing is just putting it together with a little monterrey jack cheese.
All told, it was worth it for me anyway.
