  • Ribs Anyone?

    Here's a couple of St. Louis style racks, cooked at 225 for about 3 1/2 hours, flipped them at 1 hour intervals, then foiled them with an apple and lime juice mix. They stayed in the foil for only 1/2 hour, then back to the grates, then slathered with my homemade sauce, both sides, for almost another hour. They had so much flavor, and the bite off the bone was perfect.

    Here they are at about 3 hours... just starting to pull back:

                      Great looking ribs. You used an apple and lime juice mix? At what ratio, about 50/50 or what? Never tried that one, thats interesting. Your sauce looked as good as the smoke ring. Did you use any of the apple in it? What did you use for wood? I did 4 slabs and a brisket early this morning, brisket went on at 2AM and the ribs went in at 11. DIdn't have the camera available for mine. We had a small gathering at our place FFA related today. All were satisfied and no one turned down left overs to take with them.

                            Love the apple and lime juice concoction. May need to add that to my recipe box. Great pics, thanks for sharing!!!
