  • 50th anniversary dinner party

    Recently I was asked to cook a high end private dinner for four. Celebrating a 50th anniversary. This was my first private dinner/chefs table. So the pressure was on high.
    So here we go.
    I started with a Carolina Crab cake with Mexican street corn.
    A butternut squash apple soup
    Shrimp and grits with a smoked corn relish.
    Sous vide prime filet mignon. With wild mushroom risotto and creamed brussel sprouts.
    Strawberry Creme brulee.
    BBQ with a view.

        Looks and sounds awesome! Love Sous Vide Filet... turns out like budda! Nicely done and I'll bet they were very happy!

              I have done a few such cooks. Takes balls of brass. Hell..I sweat family cooks Well met sir.

                Bravo! Looks like you nailed all of it!

                Cooking Thanksgiving for 30-35 Thursday I have found that writing down the plan of attack and timing helps me feel organized and reduces the stress level....... Along with a Bloody Mary or Red Beer(s)

                    Being organized is key. Having a steady supply of bloody Marys in the morning and beers in the afternoon and you will be golden.
