1st Brisket today

    Trying to think of things I have screwed up while cooking and the only thing I can think of is when I was first starting to bake cheesecakes they all cracked on me, tasted good but that crack just pissed me off. My mom was not a good cook so I didn't get it from her. I started cooking in 8th grade as all the shop classes were taken so I got stuck in foods class, actually worked out good for me as there were 3 guys and the other two liked each other so I had all the girls to myself. We did a couple banquets that year, it was a lot of fun, probably should have went to a cooking school.

    I do a lot of research before I get into something and cooking is no exception. I think the pellet grills make it easy but I have friends that screw everything up on theirs. I have a lot of free time so I can watch a piece of meat cook for 10 hours so it doesn't go south.

            Slices appear spot on. Always take note of what you did on a good cook so you can repeat it. Once in a while you just get a shitty muscle from a bad cow but don't change your technique once you have it. Briskets can be challenge but given successful repetition they are actually quite easy. They're just big and take longer than most folks are prepared for.

            With respect to resting, I pretty much rest throughout the cook so it's only fair to let the food have it's share!!
