  • Couple of small Prime Top Sirloins

    Visited Costco and while strolling through the meat department found these. Picked up the smallest package with an intent on making some beef for sandwiches. In the package were 2 small pieces, so I rubbed 'em up and plugged in the MES. Using hickory pellets, smoked these for just under 2 hours @ 225 degrees. Pulled @ 135 internally. Rested for about 2 hours, in the fridge for about 3 hours, then into the freezer for an hour. Pulled out the slicer and here we are.
    Wasn't expecting a whole lot, but I have to tell you, this came out really well. I'm sure the fact that it was Prime beef helped, but wow, both of us were impressed, and she's not a big beef eater.

    My best asset however is the inspiration from the members on this forum.

        Great job SOB! I really like the prime Top Sirloins from Costco. They have a moderate price and are tender, juicy, and flavorful.

                          Thanks guys. Appreciate the nice comments and points. I can see me doing another one of these smokes again sooner than later.
