I been wanting to try this for a long while...Finally got around to it last weekend...
No porcupines were harmed in the making of this dish
For those who don't know porcupine meatballs are made with uncooked rice in the meat mix which cooks up during the simmer time and makes an interesting texture and nutty flavor...
Of course I had to grill mine
Just seared a bit but not done in the center...
For the sauce I used a jar of our fire roasted tomatoes with Jalapenos...We call them Roast-tells
Smoothed that out some with the stick blender and seasoned with some herbs and stuff...
This simmered on the grill for close to an hour to thicken the sauce and cook the balls completely...
And plated with smashed taters and green beans
Turned out to be a very spicy sauce with a deep roasted tomato flavor...
A definite do again kinda meal
