  • Rudy's with a twist

    Makes aboot 2 cups... I make this in mass quantities. This is a sweet BBQ sauce with a bit of heat. Of course, everything is adjustable...

    1 (8oz) can tomato sauce
    1 cup ketchup
    1/2 cup brown sugar
    2 1/2 tbs white vinegar
    2 tbs Worcestershire sauce
    1/4 cup lemon juice (2 lemons)
    1 tsp course black pepper
    1/4 tsp cumin
    1/8 tsp cayenne pepper (I usually bump this up)
    fresh nutmeg
    dash of soy sauce
    honey to taste
    pineapple/habanero sauce to taste (from Costco)

    Combine all ingredients in a pot, simmer until slightly reduced.

    As far as canning it, follow Ball's Canning Guide... can't go wrong.

      On my list for sure. Thanks Phil.
      Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
      My best asset however is the inspiration from the members on this forum.

        As I said guys, it is more of a sweet sauce with some heat. Adjust to your liking. It is very flexible. The nutmeg in there is killer...

                    Ya' don't really need the Costco pineapple/habanero sauce... butt I did this and the kiddos loved it, so I stuck with it. Tune down the sweet and kick up the heat... Great base sauce. Butt ya' gotta try the fresh ground nutmeg in it. It will give you wood...

                      So I was wondering how you could water bath a BBQ sauce but your recipe has plenty of acid (tomatoes, vinegar, and lemon juice) to keep the pH low enough for that to work...

                      Looks like a tasty sauce to me...

                        Sorry to disappoint you Craig... no water bath needed on this trip. I know you are itching to try the SV thing... it don't work on everything.

                          Well I figured this was the perfect opportunity to heat the sauce @ 132 degrees for 22 hours and 12 minutes and then proceed with the actual cooking process... The best sauce ever...Good as prime rib
