  • Smoked Almonds attempt #1

    This weekend is full of experimentation all items are a first for me.

    Sunday I will be smoking 8lbs of pork for Buckboard Bacon.

    While fired up on Sunday I am throwing on these 8 ABT's to enjoy during the Tebow vs Brady game.

    On Saturday I smoked 12 lbs of almonds of four different ways.

    I followed recipes all from this forum.

    First left to right is
    just salted almonds
    then
    honey, brown sugar and salt





    then left to right is
    butter, worcestershire sauce, Tabasco sauce, dry mustard, granulated garlic, wasabi, sea salt
    then on the right
    egg whites, whole blanched almonds, brown sugar, ground cinnamon, chili powder, cumin, salt, cayenne

          Now that they have cooled and set over night they are all great!!

          the favorite is the

          egg whites, brown sugar, ground cinnamon, chili powder, cumin, salt, cayenne coated ones.

          2nd would go to the just plain salt cause all the flavoring comes from the smoke.

                  That do look good. Cold smoke or hot smoke?? Or maybe both ways work?????

                    Nice work...We been smokin almonds for three weekends...Give them to lots of folks this time of year...I just do the salt brine with some hot peppers in it....
