  • Puerco Arepas

    It's a leftovers night so I did up some Puerco Pibil Arepas.

    Arepas are a mostly a Venezuelan and Colombian dish. A common street food, arepas are a South American bread replacement eaten filled with cheese, butter, beans, meats or whatever is available.

    These are Venezuelan style.

    Add water to P.A.N. pre-cooked cornmeal and knead into a soft dough. P.A.N. must be used. There is no substitute.




    Rolling a ball of dough between your palms, form into a disc and fry in butter to "put on a face" or form a crust on the outside




    Bake in the oven for 20 minutes to cook a soft interior.




    Fry some veggies. Don't forget the chilies.




    Add black beans, garlic and fresh salsa




    Leftover Puerco Pibil




    Smoke some cheddar and jalapeno jack







    Put it all together with a bit of avocado




    Close them up and serve.
    Life is good!

                    I bake arepas between 250 and 350 depending upon how large I make them and how hungry I am . Sometimes I get a little out of control with this .
                    I also live at altitude and things cook a bit differently here.

                    No need to limit yourself to leftover pibil with these little gems. Let your imagination run wild with fillings. I was on leftovers duty last night because I ran out of lump for the first time in 7 years.
                    I was sure I had 1 more bag kicking around but after tearing my garage apart, nope .

                    Ran out of lump and my cooker looked like this.

It was love at first bite and I have been making them regularly at home ever since. I began by ordering P.A.N. online but it is now available at my local market.
