  • Spicy snack sticks

    For a few years now I have been trying to make the ultimate spicy snack stick recipe. I believe my quest has come to a bittersweet end. I think i got it. Everyone i give them to says they are official. So here it is, for you:

    Spicy snack sticks

    3 lbs. lean ground venison/beef
    2 lbs. ground pork shoulder
    1 tsp. insta cure #1
    2 Tbsp. Kosher salt
    1 Tbsp. Coarse ground black pepper
    1 Tbsp. Cayenne pepper
    1 Tbsp. Onion powder
    1/2 Tbsp. Paprika
    1/2 Tbsp. Garlic powder
    1/2 Tbsp. cracked toasted fennel
    1/2 Tbsp. Cracked toasted anise
    3 Tbsp. corn syrup solids
    3 Tbsp. Dextrose
    2 Tbsp. Tabasco sauce
    2 Tbsp. Soy sauce
    1/2 cup cold water

    Mix all ingredients until tacky. Stuff into sheep casings. Refrigerate overnight. Smoke at 165 F. Until internal temp reaches 152 F. Rest at room temp for 1 hour to bloom. Place in open jar in the fridge to... Nevermind. They aint gettin stored!

        Throw some fennel annd anise seeds in a dry pan on medium heat. Toss around till they smell toasty. Dump them on a cutting board and smash with a bottle

            Yeah but in my grinder, it doesn't exactly work that way. I get powder with some huge chunks. I use a P&M sometimes but was curious how he was doing it.

                Any suggestions for corn syrup solid substitute. I'm currently out and if I got meat leftover today I'll give this a try, looks good

                  Im not sure. I think its just a sweetener. Someone else might know. Im sure theres something you could use. Try honey, or regular corn syrup

                              Yeah, I saw this earlier and it looks great! I will have to try it, and thanks for the reminder. Just looking for something easy and quick. I agree with the packaged mixes being overly salty too. Theres a great old smokehouse nearby that makes excellent Pepperoni/snack sticks. Been eating them for over 30 years. Everything I try is measured against them..... I gotta keep looking
