Anyone know of a jerky recipe using tomato juice in the brine???
Made one years ago using Clamato juice but can't find it anywhere.

how much juice ?
Tomato juice is very acidic so would help tenderise the meat.
Yeah i can see that working.

I’d just add about a cup of your choice to the dry cure/spice mix you choose per 5 pounds. Probably some celery or maybe even a touch of basil mighy be interesting.
