I guess its a use what you had type thing. The lebanon bologna done around here is usually smoked in muslin or linen. I think it gives a little better smoke flavor and a drier product. Ive heard of folks using nylon stockings!
If ya got a sewing machine they are nothing to make. Very basic sewing even for the in experienced.
If not and you live in the wild north (Canada) you can get them here.
They add nothing other than the old look on sausage. It's all about how you mix and smoke your sausage that makes them good not the casings.
