Well that was a borderline disaster! We were mid pack last year this year we finished in the bottom 10 in everything but brisket. It finished 16. My team cap did the ribs and they were all around the best I ever had. Chicken had skin issues but tasted good. The pork was ok. We tried wrapping and cooking a part of the butts that cut out looked lika a mini loin. It looked good and tasted good. I cooked the brisket. In my opinion it was slightly overcooked, kinda too tender. I made burnt ends for the box and having never made or eaten them before I thought they were good but way sweet. They liked something about it. The brisket worst scores were presentation.

Had a great time but a lot of money and ton of effort for not much in the end. Sure was envious of the pellet cookers, would have been nice to sleep. Those guys put in their briskest, went to bed and didn't see me till 6am. I propped myself up on the smoker shelf so I wouldn't fall asleep and loose the temp.
Did I mention I had fun? Kinda disappointing to slip back so far from last year.

You had fun.

Sounds like you have an idea on why things scored where they did (minus the ribs). Chicken had skin issues, pork was ok.......etc.

The bad part of only competing once a year is it is sooo long in between tweeks before you get any feedback.

Have you done or considered doing any judging? Gives you a great insight into what is getting turned in and you can see first hand how you compare.

I am not gonna lie, I cant afford to compeete on a regular basis. 250.00 entry fee and meat, transportation, unforseen costs, would be like buying another home.

It is fun, would like to keep doing it but I want to get better at it.

Thanks for the replies.

Oh and I got one thing to say! you got any samples?

It was so bad this year we had to set the carving table back with lawn chairs in front. It was bad.

This is what happens when you subject your cooking skills to the entirely random tastes and opinions of "judges" who took a 8 hour class to become a professional bbq critic. I've never understood the comp circuit to be honest. Everyones taste is about as unique as their dna. Who's to judge??

Too much time and way too much money that can be spent doing better things imo

No rich, that was for the hoards of people walking by asking for food samples while we were trying to build boxes.

Monte thinking you may be right!
