  • Just Add.....Cashews?

    That's right...
    Sunday while Analog Girl was cooking her monstrous batch of ham and beans I had some time to play...
    Found a pound of cashews and a pound of raw almonds...Heck yes!

    Made my regular habanero smoked almonds because I been making mild ones for other folks and needed some HOT ones for me

    And with the cashews I wanted to try some thing a little different...
    So I wetted the nuts with H2O and dusted them well with J.A.B. and CBP...
    Actually repeated the J.A.B. three times for a real good coating...


    Smoked for about 3 hours with Mulberry wood between 250 and 300 degrees...


    Also smoked dried the Habs that spiced up the almond brine...
    These grind into some awesome HOT salt...


    And I ended up with these seriously crunchy and delicious nut clusters


    Best damn cashews I ever ate...A definite do again...

    Thanks Rich for a great product for me to play with...

    Hah! I can see that... worshy and soy... garlic. Hell yes! Thanks for the idea. Funny I had palyed with a similar mix on almonds once. Din’t do it right and it clumped up. That’s actually what got me started on beef. Funny how stuff works out.

          My absolute favorite fruit wood...In my opinion it has tons more flavor than apple...And around here folks will almost pay you to cut it down...Grows everywhere...

            Man love to try Cashews again. Pricey buggers. As bad as my fav, hot hot smoked pistachios.

            It's just nuts, can't they be cheaper?

                LOL, Sir, nuts have great qualities with the right type of fats and just good stuff they say.

                At 1 lb a day I think they say that's a binge. And hell yea.

                And I'd be fatter too.

                  These sound and look awesome! I may just be missing common acronyms that regulars know but I would love to hear more detail about ingredients, prep, ratios, etc.

                    Nuts. Easy nuff. JAB and H20. JAB dunno CBP is cracked black pepper.

                    I do mine with Jap juice, Tabasco, salt, MHHAW and whatever else I got.

                          Hmmm, never thought aboot using JAB on me nuts...

                          That stuff is good on anything that used to walk, fly, swim, or crawl.

                            The way that it "melts" just seemed right to me...Well, and the way it tastes...
                            Dampened the nuts and let the JAB make a coating on the nuts that just sucked up the smoke and ended up as a crispy crust...A very successful experiment...
