  • Forgot to post these turds...

    Jalapeņo peppers, stuffed with a mix of cream cheese, avocado, and finely chopped scallions, and of course, wrapped in bacon... These are two separate batches, smoked with RO lump and pecan chunks





    I don't get to do these very often, as the rest of the family have "heat" issues. I have gone the sweet mini bell pepper route... good, butt not to my liking.

    These were for me...

    Heat or not, those babies look sensational! Excellent wrap job Phil.

    Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
    My best asset however is the inspiration from the members on this forum.

                          Pretty basic... mix the room temp cream cheese, ripe avocado and scallions until smooth. Cut the stem end off the peppers, remove seeds and ribs, and pipe in the mix. Take a single stretched strip of bacon, start by covering the open end, turn and wrap over itself.

                          They can be done in a smoker or indirect on a grill.
