I have some venison chunks curing in a wet cure. used it before and turns out pretty good. I found a nice rub to put on them that im going to try on 1 when we smoke them this weekend.
im pretty sure I read somewhere on here that you pull them out and rinse off, pat dry then let sit in the fridge uncovered to get a skin on them?? just wondering how long they need to sit for. been trying to find where I read that but haven't had any luck
