Nice experiment there John. Funny how that non-seared steak did look ugly, I had not thought of that but you are right I wouldn't want to eat that without the sear! I never thought to use my torch for anything other than creme brûlée, I guess I should think out of the box more? Your information is thorough and helpful, thank you my friend!

Yup--Without searing it tastes Awesome, but looks bland.
I tried my little Cooking "Creme Brûlée" Butane torch first, but got nowhere fast (Too Wimpy), so I went to my "Fat Boy" Propane---Still took awhile due to the fine tip flame on it.
