  • Out Of My Comfort Zone - Shrimp Pasta Formaggio

    Took a day off earlier this week, grabbed my Mom and sister and headed to the farm for a girls day. Had lunch at the cabin and then hit some antique stores on the way home. Mom has been wanting to try a shrimp pasta dish so I decided that was what we were having for lunch. I have grilled shrimp lots of times but this type of a dish was a first for me and I was surprised at how easy it was.

    I cooked 1 1/2 lbs of shrimp in butter in a cast iron skillet on the Weber then removed it from the pan. Added a little garlic and red pepper strips for a few minutes then a can of Italian style diced tomatoes (un-drained) and let simmer for a few more minutes. Threw in about 6 oz baby spinach and wilted it. Then about 1/2 cup whipping cream, salt & pepper. Threw the shrimp back in and some spaghetti that Mom had pre-cooked the night before. Mixed it all up and let the spaghetti and shrimp heat up then covered in shredded Italian style cheese and grated Parmesan. I put the grill lid on until the cheese melted then tossed some chopped green onion on top and it was lunch time!














    I will definitely make this again but if it were for me and the old man I would add a good teaspoon or more of red pepper flakes or some cajun seasoning or even Mad Hunky would be great but I kept it scaled down for my Mom and sister.

      Simply outstanding! And cooked on a Weber.....
      Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
      My best asset however is the inspiration from the members on this forum.

                      Becky, that is indeed one heck of a dish...Getting out of our comfort zone is where our best cooks come from...And you damn sure nailed that one...

                      Probably my favorite ways to cook is with the CI on the grill...Add into that a new "recipe" and a few cold ones and it just don't get any better than that...
