  • Getting Nutty

    People have been begging for my nuts in their mouth again...who am I to deny them. All sweet and half of them have some heat at the end.

    This is for each pound of nuts
    1 egg white
    2 tbsp water
    1/4 cup honey
    1/3 cup brown sugar
    2/3 cups white sugar
    1.5 tsp kosher salt
    1.5 tsp cayenne (could also sub hot smoked paprika )
    2 tsp death pepper (optional for heat)

    Cold smoke first, then mix wet ingredients and toss nuts in. Mix dry ingredients and put in gallon ziploc. Add moist nuts and shake excessively. Back on smoker at 300 for around 30 minutes. Let cool and separate

      I can see why people like your nuts.
      I'll have to give that a try and see if people like my nuts as much as they like yours.

              Got a batch of these finishing in the oven as we speak. Couple questions though. My nuts don't look like your nuts. My nuts have clumps. Lots of em. Do you drain or somehow separate the nuts after the honey/egg wash? I just spooned them in the ziplock bag and obviously got too much liquid in the mix and it clumped up quite a bit.

                They just came out of the oven and I had to do a lot of seperating due to the clumping but the initial results are

                  Yeah the clumping happens sometimes, especially when doing 9 lbs in one night like I did. After being out of the oven/smoker and cooling for a while they just break apart real easy. I was doing 2 lbs at a time, so I doubled the ingredients and I did have plenty of liquid in the bowl. I did try to dump out any excess before dumping in the bag of seasoning

                    After letting them sit for a while they did break apart pretty easy like you say. It was my first time and I made a couple rookie mistakes but they still turned out friggin awesome.

                    I already had a buddy of mine offer to pay me to make him some just from the pic I sent him.

                        I cold smoked mine for about 30 minutes and there was just a hint of smoke flavor. Might do a little longer next time but not much.

                          Thanks Mikey! I just made a batch. I used maple sugar instead of brown sugar and 1 tsp of chipotle powder and 1 tsp of green chile powder instead of the cayenne and they turned out great!

                            These are definitely a hit. I made a double batch and used Smitty's for the heat factor. It kinda turned out like a brittle until you break it up. Just enough heat and just enough sweet. VERY addicting! These nuts are awesome.
