    Well, I decided to take the plunge and try my hand at rolling a fatty and cooking it on the gasser.
    Sharp cheddar micro cubed and mixed in with 80/20. Seasoned with salt, pepper a d garlic.
    Used the ziploc bag method to roll it out. Worked amazing. Thanks for the tips
    Added Romano, Asiago and Parmesan
    Filling was a sharp cheddar Mac and cheese with bacon. You can never have too much bacon.
    Applewood smoked bacon for the weave.
    Managed to roll and tighten successfully. Thanks again for the tips.
    Mad Hunky GP rub on the top.
    On the grill with the 6" tube of maple/hickory/cherry blend puffing away.
    Ran the grill as low as I could, switching between burners every 30 minutes to try to keep it cooking even. Was running about 300. Cracked the lid an inch and was able to get it down to 275.
    Overshot the IT target of 160. Pulled at 170..
    Another dusting of MHGP rub and into the broiler for a few to crisp up the bacon.
    All in all a good first effort me thinks

    Excellent job in my opinion.
    Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
    My best asset however is the inspiration from the members on this forum.

        What a great combination
        Cooking on a Kingstone grill, nothing fancy but
        always fun.
        Me loves some nice southern style barbecue... ah and some nice asian food ;)
