Good stuff,, Pop's brine recipe is good but next time I will cut back on the sugar,,, I Cold smoked these with pitmaster pellets, I had three bellies, one plain, one white pepper and one CBP, the plain was smoked for 12hrs and was eatin yesterday,, Wife and kids loved it,,, other two were smoked for another 12hrs, (24hrs of smoke on the pepper ones) We yet have to try these,, But the wait time in the fridge after the smoke I think helped out mellowing down the smoke cause the pepper ones really were smokey smelling when I first took them out.
