  • Chicken and sausage gumbo

    My Wife's cousins came in from Mississippi to stay the weekend. Since they were her my Wife informed her sister they were here so the decided to come visit her cousins too. I decided to cook up a big 'ol batch of chicken and sausage gumbo in the fish fry pot. I would have liked to add shrimp, but my Wife is highly allergic and a trip to the ER wasn't in the plans.
    After par-cooking the seasoned chicken ans sausage in bacon drippings, I added more bacon drippings and flour to start the roux.

    After almost two hours of near continuous stirring, I finally got the color and smell I was looking for.


    I added the veggies in and it looked like they were swimming in molasses.


    After a little bit, the chicken and sausage were added back in with some seasoning and hot sauce to simmer for a while.


    Cooked up some rice and served up with some fresh parsley on top.


    I like my gumbo thick. I have had it before where it is just too broth-y for me. This turned out just right for me and everybody seemed to like it. No complaints. I had to be careful with the heat factor since I'm the only one that can handle the heat anymore.
