  • 5 gal.vacuum bucket

    I have been thing about this for awhile.I thought it would be good to pull a vacuum while brining so this is what I came up with.

    first I took the 1 quart vacuum jar i got with my sealer,scribed it and cut it down


    i still am using Rich's camera


    then I cut a hole in the top of one of my food grade bucket and mounted the vacuum top to it. I still need to pick up some food grade silicone to glue it in place



    I will be trying it out this week with some pork butt I am doing for my son's groom's dinner

        Hope it seals for you. That's a great idea. Could use that lid on 2.5, 5 and 7 gallon buckets.

          Great Idea!!!

          Keep us updated on this as to whether it is strong enough to do the job in a 5 gallon bucket, and stuff like that. Sure is a lot of original ideas around here!!!

            I'll be interested to see how much vacuum you can get on it as the sides of the bucket are fairly flexible. I like the idea very much.

                Hey! Gimmie my camera back!

                i wonder about the flex in the sides as well...but as long as the lid seal stays... who cares if it looks strange!

                  Great idea for sure. I think it would take some force to suck the sides in ,should be able to give ya good vacuum and make for a good brining bucket.

                  I see you cut your food saver thingamajig. Could you have just made a small hole in the lid and used the tube for the food saver? Basically making a larger version of the food saver lid

                    The lid of the jar has a check valve in it MH.

                              it won't pull much of a vacumn - but you don't actually need that strong a vacumn to effect liquid uptake.

                              Make sure you do one piece outside of the bucket in the same brine for control purposes.
                              Actually cut two pieces of meat to the same weight. Have one in brine in the bucket and one brine outside the bucket for the same lenght of time. And simply weigh them both when you take them out of the brine. That way you'll know for certain whether the vacumn in the bucket is making any significant difference
