Tried three times to post this and every time something screwed up. I'll try again. Made this last Sunday. Friend of mine bought this at a meat market and brought it over for us to enjoy. Spur of the moment thing, and I had to come up with something to go with it.
The tenderloin is stuffed with onions, red & green peppers and pepper jack cheese. Rubbed with the last of my Big bad Beef Rub. The recipe can be found on amazingribs.com.
Made some hassleback taters, but using red potatoes. Melted some Ranchman's butter and tried to get as much of the goodies onto the potatoes. Basted halfway through. When pulled from the grill, I topped them with some shredded parmesan cheese and covered while the meat rested.
It was a little overcooked, not bad. I was trying to get the dessert ready.
All plated. Still tender, but not as juicy as I would have liked. The potatoes were unreal. I'll definitely make more next time, but we needed some room for dessert.
