Throw one in your chicken or beef stock pot next time you make some. It makes a huge difference in the body of the stock..all that collagen.
In the stock you don't really have to deal with them, just throw them in and throw them out with the veg and bones when you are done skimming.

I used to eat pickled pigs feet with my grandma when I was a kid. Haven't had 'em since though. And smoked hocks & beans is some serious good eatin'.
Although I usually throw some leftover ham in with them so there's a little more meat.
