  • OK let's give this cheese thing a shot

    So I like smoked cheese so why not right? It was a balmy 40° and sunny when I started two hrs later it was snowing so I knew there was no melt down issue to concern myself with. That said I had no pellets so i rigged up something...


    Then I chose my cheese I had some Sharp Cheddar, Sweet Habanero Jack, and some rye/caraway Jack.


    After 2hrs of Apple smoke I sealed them up. I'll tell you in 2 weeks how it went.

    40° and then snowing?? Man, when you "cold smoke" you don't mess around.

    Yeah, no melt danger there.

    Here's hoping it will be tasty. I'm predicting it will be.

            Improvise, adapt, overcome! Way to come up with something to get the job done. Nicely done on the cheese. That swiss on rye looks very interesting, where did you find that at?

                I've gotten away with 80 degree outside temps using the A-MAZE-N Smoker tray with minor edge rounding on the cheese. Higher than 80 is a problem. I smoke a lot of cheese in the spring and vac pack it. It will last 6-10 or 12 months in the fridge or until cooler weather returns.

                      So I couldn't wait the 2 weeks for mellowing. I had to try some. This turned out awesome. I will be doing this a lot more, and soon before the weather warms up. Good smoke taste that doesn't overpower the other flavors, in this case caraway. A few slices on a sourdough English muffin. **ON EDIT** Apparently I was channeling Rich when taking the picture.
