Yeah, yeah, yeah...... Another rack of babybacks..... Wasn't going to post it, butt things going kinda slow, so give y'all something to check oot........ Had a weird temp spike that went from 250* holding steady to 350* in aboot 20 minutes.... Not sure WTF happened, but sprayed some water on the coals & got it to sit down @ 250* - 275* after that Ate a few, then I figured I better get a sliced pic....
Rubbed with B & P, smoked with Pecan & Apple, drizzled with Parkay a couple times.... Foiled with Parkay & Tiger sauce.... Glazed with a mix of SBR's, bourbon, tiger sauce, lil rub, apple cider vinegar.
Finished with some of Hippy's Kauai Guava Smoked finishing salt that was really a GREAT addition (Thanks Monte)...... That little salty smokey taste with the sweet & a bit of crunch..... Nice addition to ribs!

Moisture is my guess.... BBQ Pitmasters had the rib cook @ Johnny Triggs place & I think they were all dumping it (Parkay) on..... I like the way the ribs turn out with it, so I'm sold...... Still experimenting with the rub-foil-glaze to get what I like.

Yes, I have propane assist starters on my Performers..... I have been putting 4 lit coals on the piles with vents wide open until it hits about 215-225 & then closing vents down & it creeps up to between 250-275.... It had worked great to maintain temps, but I was gone for about 25 minutes & it shot up on me... Maybe my neighbor was F-ing with me

Yesterday I did my first BBs in nearly 2 years, because they finally had them here for under $5 a pound ($3.99). Be posting it in a few days.
Give'en ya a for the "squirt some water on your coals" idea. Mr Bassman sneaked around this spring and built me a mini-UDS then messed around for several months before he finally found me a lid, then kinda got pissed when I asked him to buy me two new grates....
Anywho - I did a test burn last weekend and damn, she got hot quick!!! Wasn't cooking anything but gotta admit, the thought of using water to fight that fire NEVER even entered my mind - DERRRRRR!
Gonna Mad Hunky me a yard bird with a beer can stuck up it's rear today, so I'm stealing Mikey's torch idea for lighting the coals as well.

if you can cook em and eat em, i certainly will look at them man! tried out the full flegged trigg method with parkay last month i think and were good, last week did a MH with parkay etc. juxt kinda threw it together as i went but was dang good also... keep on postin the bro... make up for me slackin off.
