  • Cilantro smoked sushi

    Alright I've been wanting to try my hand at sushi. Yesterday I found sashimi tuna on a good sale and decided to go for it. I was planning on a traditional sushi but, I was working in my garden and removed a lot of overgrown cilantro. That's when it hit me. Cilantro cold smoked tuna sushi. I've never heard of that before so lets do it.

    OK here is the fuel for the smoke.



    A nice tuna steak



    I put it in a pan inside a pan of ice to keep it cool.



    After a hour or so of cilantro smoke I put in an acid bath with some jalapeno strips. I let that sit in the fridge while the rice cooked.



    Now for the plate. Some sticky rice avocado and the fixins.



    There you have it folks smoked sushi.

    throw the rice away and just give me more fish

    I do make a rice free sushi roll that's pretty decent.

    So what sort of smokiness and flavour did you get from the fresh coriander ?

            The cilantro gave a very mild cilantro flavor. I didn't use a lot of smoke. I just let it smolder. I probably got the amount of smoke that you would get in 10 to 15 minutes of a butt smoke. If that makes since.

              I used lemon, lime juice, and jalapeno. I use this when I make salmon ceviche.
