Spent a week in September helping my dad and brother chop corn silage.
First round of the season!
Mother Nature did not cooperate for a couple of days, so we launched Project Smoked Salmon Belly! My brothers, BIL, had two gallon bags of Keni Red Salmon bellies from his fishing this summer. Was a bit skeptical...as those were the first fish bellies I had ever seen that way.
Hammered them with my fish brine - sorry Rich, was too far from home to use yours! - and off we went. 4 hours in the brine, then because of the lack of smoker space, we use my dad's coon-ass smoker (cajun microwave for the PC folks in the bunch).
A bit tricky to get it and keep it at 180...but thank God and lots of cheap beer, we got'er done!
Thanks for checking out my salmon belly post! They turned out awesome and very surprising how much meat is on a good sized salmon belly!
