Everybody has their way.
I tried it with skin on, and since that, I only leave it on small fish.
I tasted a piece of Salmon skin, on one I had left the skin on. The skin was very smoky---That means some of that delicious smoke stopped to flavor the skin, and we don't eat Salmon skin. Like I said, "To each his own".
I didn't have Alder at the time, but I do now, so my next batch will definitely be Alder.

With 15 coho in the freezer from the weekend this recipe wil get a try.
No time right now but in a few weeks will fire up the smoker. Personally i dont care for smoked fish at all..ack..BUT a buddy makes it and his entire family goes ape over it...well i got his " secret recipe"..i think this one looks better.

I just had a bunch of smoked tuna last week a coworker brought in and it was Awesome... Thinking I might have to give this a try soon... Thanks for the reminder...God, Family and Friends is what it's all about. Great food just brings them all together... First John1:9...

Seems those who have tried it love it, and those who haven't tried it say it doesn't work. However small trout & other delicate fish, I leave the skin on.
