I want a plate just like that one. Fried chicken, mashed taters, gravy and (okra?).

                I luv me sum okra,

Okra'z wut I luv to eat.

                Smoked, fried, or pickled,

                Okra'z a tasty treat!

We buy it fresh from the field at roadside stands around here. De-stem, steam until just tender, then slather on the butter. Lightly season with S&P. Yum yum yum!

Now, wrapped in bacon and smoked, that's pure GENIUS!

Love this idea, Craig! I love okra. Only time I like it boiled is in gumbo.

OK..I have a question. I like okra, but the seeds are a bit annoying. Is this due to me getting crappy okra, or are the seeds always sooo...err big and tough?

It's kinda like zuchini. The larger the pod, the tougher it is and the larger the seeds. The smaller pods tend to be more tender and flavorful, and have smaller seeds. A pod is larger if it is as long as your index finger or better. A small pod is about an inch-and-a-half to two inches long and is as big around as your pinky, or so. Some shorter pods can be as big around as your thumb , then they are probably older and tougher.

At 4 inches they were no doubt tough as hell...try cutting through it with a knife...you can feel it tearing the woody fibers...
No idea why they pick and sell such substandard crap...
