Chuckie, couple of butts and a couple of bambi backstraps...ok, maybe bambi's mother.

  • Chuckie, couple of butts and a couple of bambi backstraps...ok, maybe bambi's mother.

    Did my first chuckie a couple of weekends ago, our son's 3rd b-day party. Our family doesn't mind being guinea pigs when it comes to smoked meat. Also did a couple of butts for my co-workers and a couple of deer backstraps that my sister brought for me to try. Had no idea how the deer would turn out, but it was gooood. Tragically, I didn't get any finished pics of the deer. Oops.
    Got a whole chuck roll, just over 23#. Good looking piece of meat, and through the guidance of the wonderful people here at SM, especially Capt. Dan and his tutorial, it turned out pretty damn good. According to the guinea pigs. Oh yeah, the butts were probably the best to date for me, also. It was a great weekend. My wife says she likes the beef better than the pork, and she really likes the pork. Pic heavy.

    Everybody got rubbed and retired to the fridge for about 24 hrs.


    Chuckie in about 8 AM Saturday with oak and apple. The apple is all I had for fruitwood, so that is what it got.

    The butts in foil, the chuckie still chugging along and the backstraps went on. Draped the deer with bacon for some fat for those lean SOBs.

    Ok, money shots. (My camera is kinda crappy when I get in this close, but you get the idea.)

    It was a lot of beef.

    This guy really liked the pulling process. He probably ate a pound of meat while I was pulling it.


    And his favorite new toy. And maybe mine, too.


    The chuckie ended up taking 13 hrs. Definately going to do one of these again.
    It was one of the best weekends I've had in a while.

    Dan,

    That is a kick arse smoking weekend all the way around. I happen to love apple wood too, so that is some lucky peeps that get to eat that feast. That boy will never outgrow loving the pulling process...I usually have to "test" about a pound of meat too!

      WOW!..... That's a great smoke right their & some lucky people indeed! ..... Happy Birthday to the little helper & looks like a cool quad also.... Note: Depending on your kid, you may want to "mysteriously" lose the horn on it....Just sayin..... ..... Not that I would suggest (or do) anything like that....

      Big fan of Apple myself, the more I use it, the more I like it...... Great Job all around.....

                    Dan, that's one fine job. Chucks are delicious, and it looks like you did great. Wish you had pics of the finished venison. It too, is fantastic if done right.
