Picked up some fresh local blueberries right before July 4th at the Farmer's Market that comes to where I work every Wednesday. Didn't have a clue what I was going to do with them so I got out a 1950's cookbook looking for something different and I came across a Blueberry Betty. I have always heard of Brown Betty's (Peggy Hill ) but never a Blueberry Betty and the recipe had french toast in it so I had to try it. Did it in the rain at my parents for our July 4th cookout. I will say it was good but for me too much blueberry but others in my family really enjoyed it. I made the French toast earlier at home and took with me.
3 C blueberries.
3/4 C sugar
1/8 tsp salf
1/2 tsp lemon juice
French toast (I used 5 slices)
Conf Sugar
Nutmeg
Did this in my 10" deep DO. Cook berries, sugar, salt and lemon juice for 10 minutes. Arrange slices on French toast on top. Sprinkle with confectioners sugar and nutmeg. Bake for about 30 minutes with 7 coals on bottom and 14 on top. Serve with cream.
The bottom of my brother's Brinkman charcoal smoker worked well for the DO.
